Thomas & Dutch Brings Modern Midwestern Dining to the North Shore

Farmheads Hospitality is pleased to announce that its new restaurant, Thomas & Dutch, will open on April 12, in the heart of downtown Evanston at 703 Church St. The restaurant will offer diners a place to gather and enjoy beautifully executed Midwestern ingredients, an expertly crafted wine menu, and enjoy life’s greatest moments surrounded by family and friends, Thomas & Dutch is proud to offer Chicago’s North Shore a modern, elevated dining experience while still maintaining the comforting and heartwarming feel of the country’s Midwest.

The Menu

With a menu inspired by the beauty and simplicity of Midwestern ingredients, Thomas & Dutch is eager to create a shared dining experience with a number of communal plates to be enjoyed while celebrating one’s company. Diners will notice the menu divided up to highlight a number of Midwestern cuisine staples – Our Journey Begins with plates meant to be shared among friends, vegetable-focused bites from Into The Wild, locally sourced fish in Sea Change, and finished with classic and timeless meat-forward plates from The Great Hunt.

Standout dishes to accompany these key themes of the menu have been carefully crafted by the Thomas & Dutch culinary team, focusing on celebrating the beauty and simplicity of flavors of the region. Thomas & Dutch offers a number of proteins from both the land and sea, including the Fried Walleye with beluga lentils, celery citrus salad, water cress, radish and fried capers, the Roasted Berkshire Pork Tenderloin made with grilled apples, corn pureé, potatoes and sautéed escarole and the Beef Wellington, a beef tenderloin served with mushroom duxelles, prosciutto, puff pastry, and beef glazed turnips.

The Drinks

To accompany the meal, Thomas & Dutch has expertly crafted an extensive and well-curated wine and cocktail list, complete with recommended wine pairings for a number of menu standouts. The wine program is heavily focused on featuring bottles sourced from female-driven wineries, where the past meets a contemporary vision and drive.

The beverage program features a seasonally rotated selection of both cocktails and spirit-free sippers utilizing similar ingredients as the dinner menu, creating drinks to perfectly balance the simplicity of the dishes enjoyed with them. With both traditional cocktails and whimsical interpretations on classics, there is truly something for everyone. Unique cocktails include the Honeydew Spritz made with gin, honeydew, honey and bubbles, the Beetroot Manhattan made with rye, pickled beet, and mushroom and the Sloe Gin Fizz made with sloe gin, tart cherry, rhubarb, prosecco, and egg white.

The Interior

To beautifully compliment the exquisite dinner and beverage menus, Thomas & Dutch offers a genuine, warm and inviting atmosphere complete with a modern and comfortable look and feel that brings the space to life from the moment you enter.

Designed by Kreska Design & Construction, both the interior and exterior space is full of personality, but does not dictate what the space should be. It leaves room for individuals to make Thomas & Dutch their own and become a part of the community. Whether it’s the community at large, Evanston, or an individual, Thomas & Dutch is designed to serve as a soft backdrop to people’s lives, creating a space to celebrate life’s moments.

Thomas & Dutch will be adding a 20% service charge to all checks, in order to pay their employees a fair living wage and benefits. This model provides a consistent income for all members of the team, in a way that the old tip system did not.
