Reimagining Destination Wedding Dining: An Executive Q&A with Roberta Sabbatini

Destination weddings in Italy have evolved beyond picturesque backdrops and traditional multi-course banquets. International couples today expect culinary offerings to actively engage guests rather than sit quietly in the background of a reception. Meeting this demand requires wedding planners to balance deep-rooted Italian culinary traditions with creative presentation, ensuring that every meal doubles as a memorable, immersive experience.

ItalianTouch Events addresses this challenge by designing destination weddings that weave authentic Italian heritage directly into the guest journey. Through thoughtful styling, venue curation, and inventive culinary concepts, the firm turns regional dishes into captivating highlights of the celebration. In this Executive Q&A, Roberta Sabbatini, Founder of ItalianTouch Events, shares how modern wedding menus can surprise international guests while honoring traditional roots.

Q: What led to the emergence of bold culinary concepts like black pizza at Italian destination weddings?

Roberta Sabbatini: International couples still want recognisably Italian food, but they also want a moment their guests will remember and photograph. Black pizza grew from that desire: the presentation feels unexpected, while the flavours and ingredients remain unmistakably Italian.

Q: How do you balance introducing modern food presentation with honoring authentic regional Italian traditions?

Roberta Sabbatini: I protect the soul of the dish first. I work with regional recipes, local ingredients and the people who understand them, then modernise the way the food is served, styled or experienced – never its identity simply for novelty.

Q: At what point during a destination wedding weekend—such as the welcome party or late-night bites—does an experiential food station make the strongest impression?

Roberta Sabbatini: The welcome party often has the greatest impact because guests are relaxed, curious and meeting one another, so an interactive station immediately sets the tone. Late at night, one theatrical comfort-food moment can be equally memorable, provided it is fast and easy to enjoy.

Q: Destination couples often coordinate plans from abroad. How does ItalianTouch Events help international clients visualize and shape these interactive dining experiences before arriving in Italy?

Roberta Sabbatini: We use live venue tours, videos, moodboards and clear visual references so couples can understand not only how a station will look, but how guests will move through it. We then translate their ideas into a practical brief for the venue, chef and suppliers before they arrive.

Q: How can couples use regional culinary differences across areas like Tuscany, Puglia, or Sicily to tell a unique story throughout their wedding weekend?

Roberta Sabbatini: I treat each region as a chapter on the weekend. Tuscany might bring wine, pecorino and rustic sharing food; Puglia, burrata and masseria traditions; Sicily, citrus, arancini or cannoli – with each experience placed where it best suits the rhythm of the celebration.

Q: What advice do you share with couples who want their wedding menu to deliver entertainment without feeling gimmicky?

Roberta Sabbatini:  Start with meaning, not spectacle. Choose one or two experiences that genuinely belong to the location, make sure the food is excellent and the service flows naturally, and let guests participate without feeling that they are being made to perform.

Curating unforgettable wedding dining requires more than great recipes; it demands an understanding of pacing, atmosphere, and guest engagement. By transforming familiar Italian classics into interactive moments, couples can honor the country’s rich culinary legacy while giving guests a distinct visual and sensory memory to take home.

As destination celebrations continue to shift toward highly personalized experiences, inventive catering and regional storytelling will remain central to great event design. ItalianTouch Events continues to lead this shift, helping international couples celebrate authentic Italian culture through thoughtful planning, distinctive styling, and unforgettable dining.
