I mean, the correlation is pretty obvious: as more and more states start legalizing recreational cannabis use, more and more restaurants are gonna start cashing in on the billion dollar business that is the munchies.<\/p>\n<p>States like Colorado have already seen the arrival of ganja-based desserts, pizza and sushi. Known as jianbing in China, these crispy-cooked asian pancakes are a cross between a breakfast burrito and a crepe and often feature fillings like egg, mung bean paste, scallions and sauces. BUT, because we&#8217;re garabage people, we can&#8217;t just serve a chickpea or beet burger and be done with it.<\/p>\n<p>No, according to\u00a0<a href=\"https:\/\/www.eater.com\/2016\/7\/25\/12270698\/lab-grown-meat-beyond-burger-impossible-foods\" target=\"_blank\" rel=\"noopener noreferrer\">Eater<\/a>, our fake-meat now has to be as real as possible, and that includes bleeding like an animal. While it sounds pretty gross, food engineers like\u00a0<a href=\"http:\/\/beyondmeat.com\/about\" target=\"_blank\" rel=\"noopener noreferrer\">Beyond Meat<\/a>\u00a0have started\u00a0<em>growing\u00a0<\/em>plant proteins in labs just so that your morning veggie sausage is as life-like as humanly possible. Sure, gyros are great, and so are arepas, but together? In one dish? Still, co-ops like the San Fransisco based\u00a0<a href=\"https:\/\/livespringwater.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Live Water<\/a>\u00a0are still pushing forward with their untreated, straight-from-the-earth bottles, despite fears over deathly bacteria. While I&#8217;m not necessarily opposed to an ~earthier~ drink now and again (not to mention the environmental benefits) I can&#8217;t help but think of how much better my G&amp;T might be without, I dunno, beet trimmings in it.<\/p>\n<p>&nbsp;<\/p>\n<h2>Tactile Foods<\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-26410\" src=\"https:\/\/urbanmatter.com\/chicago\/wp-content\/uploads\/2018\/01\/shutterstock_688599931.jpg\" alt=\"Food Trends 2018\" width=\"1000\" height=\"667\" srcset=\"https:\/\/urbanmatter.com\/chicago\/wp-content\/uploads\/2018\/01\/shutterstock_688599931.jpg 1000w, https:\/\/urbanmatter.com\/chicago\/wp-content\/uploads\/2018\/01\/shutterstock_688599931-600x400.jpg 600w, https:\/\/urbanmatter.com\/chicago\/wp-content\/uploads\/2018\/01\/shutterstock_688599931-300x200.jpg 300w, https:\/\/urbanmatter.com\/chicago\/wp-content\/uploads\/2018\/01\/shutterstock_688599931-128x86.jpg 128w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>Paying with your food is in according to\u00a0<a href=\"https:\/\/www.forbes.com\/sites\/phillempert\/2017\/12\/13\/10-food-trends-that-will-shape-2018\/#2793ee924104\" target=\"_blank\" rel=\"noopener noreferrer\">Forbes<\/a>. The theory goes that we&#8217;ve already experimented with taste, sight, sound and smell when it comes to food, so why not throw the 5th sense, touch, into the mix.
